CRISPY PAPRIKA BUTTER BEANS

 
 


Something a little different to the usual salted nuts or fava beans…. Move over oven-roasted chickpeas - these are bigger and better - the crispy butter bean! I recently designed some snacks for a sharing board and I couldn’t resist my favourite combo of sweet smoked paprika and oregano to flavour some oven roasted butter beans. Crispy on the outside, soft and steamy on the inside these delicious morsels are moreish to say the least and were a big hit on set. Serve with drinks, or sprinkle over salads, vegetable medleys or soups, these take no time at all to pull together. Keep the ingredients to hand in your cupboards and these are good to go. 


 

INGREDIENTS

1 tin of butter beans

1tbsp extra virgin olive oil/ghee

Scant* 1 tsp garlic/onion powder

1/2 tsp flakey sea salt

1 tsp sweet smoked paprika (not hot smoked)

1 tbsp gluten-free flour or corn starch

To garnish: 2 tbsp chopped oregano to serve, plus sprigs

METHOD

1. Preheat oven to 200C and line a large baking sheet with parchment paper.

2. Rinse and drain the beans.

3. In a bowl mix the flour, salt and spices, add the beans and toss to cover in the mixture.

4. Spread out across the baking tray, drizzle with olive oil or melted ghee and roast for 20-25 mins until crispy stirring halfway through.

5. Sprinkle with the chopped oregano, garnish with the sprigs and serve immediately.

East by West tip

Delicious with or without the garlic or onion powder. Also yum, combining cumin with paprika. I chose sweet smoked as oppose to hot paprika for the perfect kick but by all means go hot if it suits you!
