MAKE YOUR OWN: CHINESE 5-SPICE

Make a quick batch of your own Chinese 5-spice using these ingredients and subbing in a bit more of the others if you can’t find one of the ingredients, though go easy on the clove — it’s super pungent! This mix works great in congee or apple and rhubarb crumble.

INGREDIENTS

4 whole star anise
½ tsp fennel seeds
5 whole cloves
1 tsp ground cinnamon
¼ tsp ground ginger

METHOD

Using a clean and dry pestle and mortar to crush the star anise, cloves and fennel seeds. Mix in the cinnamon and ginger and store in a clean dry jar. You can also lightly toast before using (be sure to allow to cool fully before storing) for enhanced flavour.
