ROCKET CHUTNEY



 

INGREDIENTS

1 packet (90g) rocket, washed and dried
¼ cup (30g) walnuts or sunflower seeds
1 small clove garlic
1 tsp grated lemon zest, plus juice
Sea salt
Pepper
2 tbsp extra virgin olive oil
Touch of jaggery or raw honey

METHOD

  1. In a tall cup or jug, use an immersion blender to blend all the ingredients until creamy and smooth.

  2. Taste and adjust seasoning, also adding a bit of water if the consistency is too thick.
