ROCKET CHUTNEY
INGREDIENTS
1 packet (90g) rocket, washed and dried
¼ cup (30g) walnuts or sunflower seeds
1 small clove garlic
zest of one lime plus juice
1/8 tsp/pinch sea salt
Freshly ground black pepper
2 tbsp extra virgin olive oil
1/2 tsp jaggery or raw honey
METHOD
In a tall cup or jug, use an immersion blender to blend all the ingredients until creamy and smooth.
Taste and adjust seasoning, also adding a bit of water if the consistency is too thick.
