SUPER SUPPER MUNG DAL SOUP
What's for dinner? How about this beautiful bowl of golden yummy - SUPER SUPPER MUNG DAL SOUP!
This basic dal warrants being called super because; it's super tasty and super easy to make, as well as super easy to digest which is an A+ in #ayurveda
A favourite for when we’re craving something nourishing and satisfying that doesn't take hours to make and creates minimal washing up. Especially great for balancing vata and pitta - for kapha types serve extra soupy with plenty of fresh greens cooked in.
If you can’t get the split mung dal, which are the little yellow dal, then grab a bag of whole green mung beans from the supermarket and soak overnight, rinse and drain.
Serves 4- 6
1 cup yellow split mung dal, rinsed
6 cups water
4 Tbs ghee or coconut oil
1 tsp black mustard seeds
1 tsp cumin seeds
1 pinch asafoetida (hing)
2 cloves garlic, chopped
1 small handful coriander leaves, chopped
5 curry leaves, fresh or dried
1/2 tsp turmeric
1 tsp garam masala
3/4 sea salt
Add the mung dal and water to a large pot and bring to a boil. Cook on medium heat for 45 minutes until soft (yellow split lentils take less time than whole mung), uncovered, stirring occasionally to prevent sticking.
Meanwhile, make the tarka: heat the ghee/oil in a small saucepan on a medium heat. Add the cumin seeds, mustard seeds and hing and stir until the seeds pop. Turn down the heat, add the garlic and sate lightly, then add the curry leaves, cilantro, turmeric and masala powder. Stir well and the tarka to the dal soup.
Season, simmer for 2 minutes and serve
